It’s Pimms o’clock!

No, seriously, it is. How do I know? Let’s just say us Brits have an innate sense about these things.

But what does “pimms o’clock” mean? I hear you ask. Well, if you’re British, you probably know. But if you’re not, let me paint you a picture:

The sun is shining, it’s hot and lovely outside. You’ve nothing better to do but sit back and relax with a delicious drink. Maybe there’s some green grass and a picnic involved, maybe it’s your front porch or your backyard. Either way, there’s no need to worry about what time it is, nothing in the world matters apart from this moment…like I said, it’s Pimms o’clock.

Drinking Pimm’s is one of those things that’s synonymous with the English summertime for me. Just as steak and ale pie reminds me of cosy warm pubs in the dead of winter, Pimm’s reminds me of summertime picnics, barbecues, and pub gardens. It’s fancy enough for a summer wedding, garden party, or Henley Regatta and casual enough to enjoy with your feet up in your backyard with friends.

Grab your biggest pitcher and make one of the best summertime drinks there is. One part Pimms to two or three parts lemonade (depending how sassy you’re feelin’). Throw in some fresh mint, cucumber, strawberries, and orange and you’ve got the classic! Bottoms up!

Classic Pimm’s Cup
makes 4-5 long drinks

Ingredients

  • 7 oz (200ml) Pimm’s No. 1
  • 21 oz (600ml) lemonade (Sprite or 7Up is great – I happened to have real lemonade on hand which was lovely)
  • 2 cups of ice
  • several fresh mint leaves
  • 1/4 of an English cucumber, halved lengthwise and sliced
  • 1/2 an orange, sliced
  • small handful strawberries, quartered

Directions

  1. Fill a pitcher or jug with ice. Pour Pimm’s into pitcher and top up with lemonade.
  2. Add the mint, cucumber, orange, and strawberries. Cheers!

Happy Fourth of July, America! I’m here at a friend’s cabin for the long weekend in Wisconsin enjoying reading, lying in the sun, making great big group dinners, singing karaoke at the local dive, reading my new book, and…making the most of this floating dock.

fourth of july salads

We’re not talking limp lettuce and soggy tomatoes here folks. These are hearty, filling, pretty, seasonal and delicious salads to add to your Fourth of July menu. If you’re not American or you don’t live in these parts, consider this a summer round up of salads for your next barbecue or garden party.

1. Mediterranean Eggplant and Quinoa Salad

Still one of my favourites – the ingredients list is a little longer but if you’ve time then I highly recommend this salad – it’s always a huge hit! Mediterranean is right – olives, fresh mint, and olive oil really come alive with the cumin, coriander, and cayenne. This salad is not messing around when it comes to flavour.

2. Chargrilled Asparagus with Roasted Cherry Tomatoes and Haloumi

Oh my goodness. I dream about this salad. It’s just about the most perfect thing out there. Filling enough to be served solo but even better alongside a juicy, beautiful steak. Just make it and I promise you will thank yourself.

3. Lemon Grain Salad with Asparagus, Almonds and Goat Cheese

Rich, creamy, and tangy goat cheese is offset beautifully by the nutty almonds and tart lemon. I adore this salad. Bet you a tenner you will too.

4. Quinoa Salad with Black Beans, Avocado and Cumin-Lime Dressing

People are loving this salad and letting me know about it! Don’t miss out – it’s perfect outdoor eating fare and jammed packed full of flavour.

5. Radish, Cucumber, Cherry Tomato & Mint Relish


Not quite a salad but too perfect for the holiday weekend to ignore. Serve it up with grilled chicken and those looking for something lighter but still packed full of flavour will LOVE you. It doesn’t hurt that it looks so dang pretty either.
