Welcome to the weekend!

In England we called mimosa’s “Buck’s Fizz”. It’s true, we do (here’s why). Also: I got a little blood orange crazy.

No recipe here but I am giving you license to do as I did last weekend: juice two blood oranges. Half-fill your glass with Prosecco or some other dry champagne. Pour blood orange juice to the top and add an orange slice for frills. Bottoms up!

Yesterday was one of those below zero fahrenheit days where you can feel your nose hairs freezing. I know, I’m lovely, aren’t I?

It was also insanely bright and sunny. The sky always looks so, so blue when it’s cold like that. It makes Minnesota winters bearable to me.

It’s becoming a habit of mine on these ultra cold days to walk the one-and-a-half blocks to Lucia’s To-Go at lunchtime and warm up with a bowl of their vegan three bean chili, a big hunk of fresh bread and some salad.

The only thing I wish is that I had all my best girl friends with me to huddle over coffees and cookies. Yes, I am a big girl and no, I don’t care.

These chocolate sea salt cookies were the inspiration for my own version by the way! They’re ever so dark and rich, although I’ve realised mine are more sea-salty and I must say, I’m a big fan of that.

Don’t you just love lunches out? They’re my favourite!

1. Found Dundee Marmalade at the supermarket. It’s made in the U.K. and contains thick chunks of Seville orange rind. Marmalade on toast was a breakfast staple of my Mum’s when I was growing up.

2. Baked cookies just because I knew I’d want about 38 of them the next day. It was a good decision.

3. Discovered Ines Rosales Tortas de Aceite or Olive Oil Tortas from Seville, Spain. Handmade and individually-wrapped, they’re a beautiful thing to enjoy on a sleepy weekend morning with a cup of strong coffee or a Saturday afternoon with slices of sharp cheddar cheese.

4. Remembered how much I love yoga and how challenging it is for me.

5. Had proper English bacon (a la the bacon sarnie) with runny fried eggs and sourdough toast for dinner. Agreed with Dan that it is one of our favourite dinners of all time.

6. Cursed the winter cold. About eighteen times.

7. Made whole wheat butternut squash waffles. Oh yeah.

8. Hit up our local pub for some white winter ales and onion rings….then came home and made spicy turkey chili for dinner. Glorious, I tell ya.

9. Cooked chana masala. It blew my brains out, as per usual. While I cooked I listened to my Band of Horses record, drank lots of red wine and watched my cat do this:

It was pretty awesome.
