1. Did some intense day dreaming about the last time I was in Thailand with Dan to be part of my brother’s wedding. Such happy memories of this island and eating pad thai (read about how I took cooking lessons in Thailand here).

2. Ate at Cossetta’s where your gigantic portion of lasagna will be served with a complimentary gigantic side of mostacolli and garlic bread. I got a tummy ache from stuffing my face. That’ll learn me.

3. Baked a big girl’s cake (i.e. not a bundt cake or a loaf). It even had more than one layer. Go me!

4. Learned that cornbread with poached eggs and hot sauce makes a fine, fine breakfast.

5. Sung Spring’s praises as it finally (heavens to Betsy!) warmed up in Minnesota. Now dreaming of picnics, bbqing, and this dish in particular.

6. Visited the farmers’ market for the first time this year and made ramp pesto as a result.

7. Made a late night run to get carnitas tacos on Lake Street. Such a good idea.

8. Spent an evening round a bonfire with friends, singing songs, and drinking gin and tonics. No finer way to spend a night.

9. Baked some muffins that were complete and utter failures. Rhubarb and custard, since you’re asking and too much salt and soggy rhubarb since you’re wondering that too. Can’t win ’em all…

10. Left on a jet plane for Seattle! But I’ll be back before you know it.

You didn’t think I’d ignore it entirely did you?! Admittedly, I’ve not been that caught up in all the royal wedding hullabaloo but that doesn’t stop me loving (unabashedly) the idea of a proper Royal Wedding Party. If you happen to be planning a last minute celebration, here are some decor and food ideas that might just (royally) tickle your fancy.

1. Design Editor has all the down-loadable paper goods you can imagine for decorating a British/Royal themed party. 2.  BBC Food of course has a several possible Royal Wedding recipes to choose from but here are some of my faves. Cucumber sandwiches! 3. Sausage rolls are so quintessentially British and so delicious. Check out my recipe for mini sausage rolls (so cute!) here. 4. Lord, I think I’m dribbling all over myself. Traditional scones with clotted cream and jam. Absolute favourite. 5. If you’re going to bake a cake, make it a Victoria Sponge. 6. For something more dainty, I’d recommend these strawberry and cream cupcakes. 7. And last but not least, don’t forget to kick things off with some Pimm’s Punch. Cheers!
