We’re friends! I’ve been trying to use up the lovely eggplants some friends of ours donated us and first came up with a walnut/rosemary/pasta concoction. Yum.

Last night’s endeavor was Baingan Bharta a.k.a. Eggplant Curry:

There’s no real recipe since I just used what I had on hand but it went something like this:

  • saute 2 diced jalapenos and 1 tbs grated ginger in oil
  • add 2 diced small onions and cook for 5
  • add 2 diced garlic cloves and 3 chopped tomatoes (juice ‘n all) and cook for 5 more
  • add inch cubed eggplant (after salting it for 30 mins and rinsing it)
  • stir in about 1 tbs curry powder/garam masala
  • cook for another five mins
  • season to taste with s&p;
  • garnish with cilantro and serve with brown rice
  • And maybe some blue corn tortilla chips


Twas glorious. Defo would have been better if I had had some cumin and tumeric on hand but it was still delish.

Parmesan Rosemary Sweet Potato Fries

Again it was make it up as you go with whatcha got but this involved slicing one sweet potato and coating it with olive oil, diced rosemary and salt:

I then adding some grated fresh Parmesan on top and baked them until crispy (about 25 mins).

I have some super awesome news too involving traveling. Next weekend (not this coming one) I will be going to Austin for a week! I am so excited.

I may or may not have mentioned before that I studied abroad in Austin (in case you’re a new reader, as the blog title suggests, I’m a wee Brit) and that is where I met my lovely fella, Dan. We are both heading down there which is pretty amazing. I haven’t been back for three years so I am extremely pumped! I’ll be working for a couple of days but then be basically freeeee to eat Tex-Mex, drink margaritas, bask in the undoubtedly better-than-Minnesotan weather, see old friends, see family and generally have a big knees up. Make way for the mother of all vacation re-caps. Everything’s bigger in Texas, ya’ll.

I’ll also have some stellar guest posts lined up for that week so even more for you to look forward to!!

Anywho, I had my last run before the ten mile race this morning in the absolute pouring rain and freezing cold! It was miserable and I was drenched.

At times with the wind and rain blowing into my face I felt like it was a real uphill battle (especially when I was actually going uphill!) but I reasoned that if I could run five miles in that hellishness then I could take whatever Sunday throws at me.
