The dog days of summer are certainly here in Minneapolis. Steamy, humid, shorter days that have that hazy feeling to them. My apartment is a complete sauna 24/7 after soaking up the heat for three months and my desire to cook is at an all-time low. Just for you guys though, I’m going to brave the kitchen once I hit publish…

I’m relying on cool, easy ideas to get me through these steamy days and I thought you might appreciate some of them too!

Here are some of my highlights from this summer. They are all either no-cook or minimum heat required recipes. Enjoy!

As of this second, pea and mint bruschetta sounds amazing..it was SO dang good.
