The dog days of summer are certainly here in Minneapolis. Steamy, humid, shorter days that have that hazy feeling to them. My apartment is a complete sauna 24/7 after soaking up the heat for three months and my desire to cook is at an all-time low. Just for you guys though, I’m going to brave the kitchen once I hit publish…

I’m relying on cool, easy ideas to get me through these steamy days and I thought you might appreciate some of them too!

Here are some of my highlights from this summer. They are all either no-cook or minimum heat required recipes. Enjoy!

Which one of these do you think would be your favourite?
As of this second, pea and mint bruschetta sounds was SO dang good.

What are your favourite things to eat when it’s blazing hot outside?
Not going to lie, today is definitely an ice cream day…

I really want to try your edamame and chickpea salad! Looks amazing with the egg. Favorite summer meals involve salads and tons of fruit :)

Anything with chick peas definitely has my heart.

It IS hot these days! Our house can't stay cool! I love heat though so I'm good. I also love cool foods and don't want to start baking something when it's like this out there.

I made a smashed pea & mint puree too and I agree, dang good. But that chickpea & edamame salad also sounds wonderful and I love that you served it with an egg!

You are all women after my own heart! The edamame and chickpea thingy was glorious AND the easiest by a long stretch. Hooray! Plus I have everything to make it tonight (score!)
