chocolate cookies with sea salt

Double chocolate; double the fun, right? Yes. Correct. Bam. Right on the money. Double chocolate with sea salt? Out of control.

Anyone who follows my ramblings on Twitter or Facebook will know that I recently made a dreary, rainy day exponentially better by walking to a little place called Lucia’s here in Minneapolis and picking up a chocolate cookie with sea salt.

Ever since then they’ve been on my brain, and I had to make some of my own. It’s been a long time since I baked! Baking really is good for the soul, I think. After a stressful day of errand running with sore legs from an early morning run around the lakes, I got home and literally the first thing I did after kicking off my shoes was put the oven on and bake these pretty little nuggets.

Chocolate Cookies with Sea Salt

Makes about 2 dozen over-sized cookies

  • 1 cup all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 pound good-quality milk chocolate, 4 ounces coarsely chopped and 4 ounces cut into 1/4-inch chunks
  • 1/2 cup (1 stick) unsalted butter
  • 1 1/2 cups sugar
  • 2 large eggs
  • 1 teaspoon pure vanilla extract
  • sea salt, to taste

Directions

  1. Preheat oven to 325 degrees. Whisk together flour, cocoa powder, baking soda, and salt; set aside. Melt 4 ounces coarsely chopped chocolate with the butter; let cool slightly.
  2. Put chocolate mixture, sugar, eggs, and vanilla in a bowl and mix until combined. Gradually mix in flour mixture. Fold in chocolate chunks.
  3. Using a 1 1/2-inch ice cream scoop, drop dough onto parchment-lined baking sheets, spacing 2 inches apart. Simply grind a little sea salt on each scoop of dough. Bake until cookies are flat and surfaces crack, about 15 minutes (cookies should be soft). Let cool on parchment on wire racks. Cookies can be stored between layers of parchment in airtight containers at room temperature up to 3 days.

It’s amazing to me how the smallest sprinkling of sea salt takes these cookies from normal, great cookies to super duper special.

Without wanting to sound like an own-horn-trumpeter, the husband did dub these the best cookies I’ve ever made, which I feel like is enough reason for you to whip out the chocolate and butter, and get melting immediately. Enjoy!
